Recipe for your next Bar-b-que

For those of us who prefer greens with their meat. Or have some accidental vegetarian friends. Or something like that.

Packet Bitter Greens

4 cups bitter greens (i.e. kale, Swiss chard, mustard greens, beet greens, kohlrabi, etc.) washed, trimmed and chopped roughly (or roughly chopped)
1/4 cup Trader Joe's Eggplant Garlic spread*
2 Tbs. Olive Oil
1 Tbs. Tahini (optional)
3 slices chopped bacon

Combine all ingredients, wrap in heavy aluminium foil and toss on the grill next to your steak or seitan. After 5-10 minutes, depending upon the hardiness of your bitter greens, your packet should be done. We did this on our handy Foreman Grill, since that's all we've got to work with.

*If you haven't a Trader Joe's in easy driving distance, combine some babaganoush, 1 fresh chopped tomato, crushed red pepper and salt to taste.
